Blueberry Boy Bait Cake with Riverbench Demi Sec Sparkling Wine

This recipe is an old favorite of my mom’s. There is a blueberry farm right by Riverbench Vineyard, so we all go there as many times as we can when it’s open to pick our own and make this amazing cake. It’s perfect for a snack or dessert and pairs beautifully with the slightly sweet Demi-Sec.

  • 2 cups flour
  • 1 1/2 cups sugar
  • 3/4 cup shortening
  • 2 tsp. baking powder
  • 2 eggs
  • 1 tsp. salt
  • 1 cup milk
  • 1 tsp. vanilla
  • 2 cups fresh blueberries

Preheat oven to 350 degrees.

Blend the flour, sugar, and shortening together. Reserve 3/4 cup of this for the topping. To the remaining mixture, add baking powder, egg yolks, salt, milk and vanilla.

Beat the egg whites until stiff, then fold them into the batter. Spread in a greased 9″ by 13″ pan, then top with blueberries. Cover with reserved topping and bake for about 40 minutes until edges are just starting to brown and cake is set. Serve with a glass of Cork Jumper Demi Sec sparkling wine.
