Truffled Convent Eggs with Riverbench Blanc de Blancs

Truffles with baked eggs can be one of the most comforting dishes in the world.  These are delicious for brunch or even a quick weeknight dinner with a green salad.  This recipe is for one serving but you can easily make many more at a time.  The rich creaminess of the egg is a sensational match with the bright, crisp Blanc de Blancs.

  • 2 eggs
  • 1 tsp. butter
  • 1 tbsp. heavy cream
  • salt and white pepper to taste
  • white truffle

Preheat the oven to 350 degrees.

Butter a small ramekin.  Add the eggs and cream, then top with salt and pepper.  Bake for 10 minutes or until the eggs are just set.  If you like them a little more done, that’s fine, too – just add a few more minutes of cooking time.

Remove from the oven and shave thin slices of white truffle on top.  This will warm them slightly, releasing the aroma.
