Birthday Pupcakes – For the Dogs!

This treat is one your dog will thank you for!

• 1 cup whole wheat flour
• 1 tsp. baking soda
• ¼ cup unsalted peanuts
• 1 egg
• ¼ cup vegetable oil
• 1 tsp. vanilla
• 1/3 cup honey
• 1 cup finely grated carrots
• 2 tbsp. water
• 1 cup mashed banana
• 1 tbsp. unsalted butter, softened
• 6 tbsp. carob powder
• 1 tsp. vanilla
• 2 tbsp. flour
• 1 tsp. cinnamon

Preheat the oven to 325 degrees. To make the cake, mix the whole wheat flour, baking soda, peanuts, egg, oil, vanilla, honey, carrots, and water until well combined. Spoon into one greased mini muffin tin, filling each muffin about ¾ of the way. Bake 12 minutes or until a toothpick comes out clean. Cool.

To make the frosting, combine the banana, butter, carob powder, vanilla, flour, and cinnamon. You may need to add a bit of water to this as well to get it the right consistency. Spread over pupcakes and serve!

Makes about 16 mini pupcakes.
