Rabbit only sounds gourmet now that stores like New Frontiers and even Albertson’s are carrying it! Try this recipe for something fun and different to throw on the grill. The rustic flavor of this dish is delicious with our earthy One Palm Pinot Noir.
• 1 cup Greek yogurt
• 1 tsp. dried Greek oregano
• 1 tsp. paprika
• 2 tbsp. grated onion
• 1 tbsp. lemon juice
• 1 tbsp. grated garlic
• ½ tsp. ground coriander
• ½ tsp. ground cumin
• 1 whole rabbit, about 3 lbs., cut into serving pieces
• ½ cup crumbled feta cheese
• ¼ cup olive oil
Combine all the ingredients for the marinade in a bowl. Add the rabbit pieces and toss well to coat. Marinate for at least an hour or overnight.
Bring the rabbit to room temperature before grilling. Heat your grill to medium-hot and grill at indirect heat for approximately for about 15 minutes or until cooked through.
In a small bowl, combine the olive oil with the feta cheese. When the rabbit is fully cooked, remove from the grill and cover with this mixture. Serve.
The rabbit is also delicious with grilled onions, zucchini, and eggplant, so skewer up some pieces and let those cook right alongside!
