Scandinavian Almond Cake with Riverbench Riesling

We’re so excited to have a sweeter wine on the list that we just had to pair it with dessert. Our staff member, Carol Bjelland, makes this delicious almond cake, and volunteered to share her recipe! You’ll need a special almond cake pan, which is easy to find online. Otherwise, just use what you have and adjust the cooking time. This recipe makes awesome cupcakes, too!

• Cooking spray
• 1 ¼ cups sugar
• 1 egg
• 1 ½ tsp. pure almond extract
• 2/3 cups milk
• 1 ¼ cups flour
• ½ tsp. baking powder
• 1 stick butter, melted

Preheat your oven to 350 degrees. Spray your pan with cooking spray. In a bowl, beat the sugar, egg, almond extract, and milk. Add the flour and baking powder and mix well. Stir in the butter.
Bake for 40 to 50 minutes or until edges are brown and cake is cooked through. Cool in pan before removing. Sprinkle with powdered sugar and enjoy!
